How to Make Your Bofrot / Puff Puff
- Pour the Donut Mix into a large bowl
- Gradually add warm water — a little at a time — stirring continuously until you have a smooth, thick batter slightly thicker than pancake batter with no lumps
- Cover the bowl with a clean cloth and leave in a warm place for 1–2 hours until the dough has doubled in size
- Heat vegetable oil in a deep saucepan to approximately 170°C — the oil should be deep enough for the doughnuts to float and fry evenly
- Test the oil by dropping a small amount of batter in — if it rises to the top quickly, the oil is ready
- Drop spoonfuls of batter into the hot oil — do not overcrowd the pan
- Fry for 3–5 minutes, turning occasionally, until evenly golden brown on all sides
- Remove with a slotted spoon and drain on kitchen paper
