How to Prepare Tuo Zaafi (TZ)

  1. Bring water to a boil in a saucepan — approximately 2 cups of water per 1 cup of flour
  2. In a separate bowl, mix the Ena TZ Flour with a small amount of cold water to form a smooth, lump-free paste — stir thoroughly before adding to hot water
  3. Gradually pour the paste into the boiling water, stirring continuously with a wooden spoon
  4. Reduce to medium heat and keep stirring for 5–10 minutes until the mixture thickens into a smooth, soft, cohesive dough
  5. If too thick, add a little more hot water and continue stirring
  6. Once smooth and pulling away from the sides of the pot, scoop into portions, shape, and serve hot immediately
